Potawatomi announced today that after eight years, Dream Dance restaurant is changing things up a bit.
Beginning June 9, the fine dining restaurant within Potawatomi Bingo Casino will be known as Dream Dance Steak and will serve a variety of steaks, soups, salads and sides.
"Our new focus on great steak is in line with what our guests want, something they have been asking for and a trend we've seen in their ordering habits." Potawatomi Bingo Casino Food and Beverage Director Michael Tsuchihashi said. "This change represents the next step in the evolution of the restaurant."
Chef Jason Gorman says he will continue to use as many locally produces ingredients as possible and some of his most popular dishes -- lobsterwurst and red deer venison -- will remain on the menu.
Dream Dance's last day of service before reopening will be May 30.

Doesn't Milwaukee have enough steakhouses? Too bad. Then again, it is in a casino.

Some of the other press out there that was released today does mention that they are still doing tasting menus and a kitchen table plus the fabulous wine program is still intact. To me, it sounds like the chef will still have a chance to "utilize his culinary talents". Hell, times are tough- you gotta do what you gotta do. I'll take a dream dance steak house over no dream dance at all.

In other words, Dream Dance wasn't very profitable as a fine dining restaurant, so they hope to make more money with the steak idea. DD has already been serving steaks, so it sounds like they're rejiggering the menu to put them front and center while trying not to alientate too much the clientele who liked the old DD. But if steaks really do become the focus, it sounds like Gorman's culinary talents won't be fully utilized. How long until he moves along to another, more creative gig?

You better read it again...I don't see fine dining even addressed. I've been there twice in a month. I really enjoy dining there.

"...a trend away from fine ding..." That's what the Potowatomi food and beverage director claimed. Well, I say BS! BS! BS! Yaffa converting to a brewpub and now Dream Dance?! Yes, lowbrow fare is more profitable, but the idea tha fine dining is dead is preposterous! Sure, be like Yaffa and go for the money, but you lose all culinary respect!
