"We founded Fleming's on the premise that a steakhouse need not be expensive, nor stuffy," says Bill Allen, co-founder and partner of Brookfield's newest wine and dine experience.
Fleming's opens Friday, March 16 at 15665 W. Bluemound Rd. and specializes in USDA prime corn-fed beef, ranging from 8-oz. petit filet mignon to the 40-oz. Porterhouse for two. The menu also includes fresh fish, poultry and fresh salads.
The restaurant features a signature 100-wines-by-the-glass program and a special wine flight tasting menu created by Marian Jansen op de Haar, Fleming's director of wine.
The 7,236-sq. ft. restaurant seats about 256 and has an outdoor patio, an open-air kitchen and a private dining room able to accommodate 70.
Fleming's Prime Steakhouse & Wine Bar was launched in Newport Beach, Calif., by Paul Fleming and Allen in 1998 and there are now 49 locations nationwide. Brookfield is Wisconsin's second location; there is also one in Madison. It belongs to the same family of restaurants that includes Bonefish Grill, Cheeseburger Paradise and Carrabba's Italian Grill.
