Johnson takes over at Hotel Metro
Justin Johnson, who I profiled last January when he was doing amazing things at Harwood Place, a Wauwatosa retirement facility, has been named executive chef at Hotel Metro Downtown.
"My plan is to mirror the hotel's green status with sustainable, local, natural ingredients," Johnson tells me. "It will be 'new' American with my good ol' fashioned French back bone.
"I plan to have my menus basically finished by the time I start on (Feb.) 8 and from there we will strategize a 're-launch'."
Johnson -- who has been at Harwood Place Retirement Community for about three years -- says he interviewed at Metro before that but turned down the offer that followed.

My wife and I got married at Metro in September of 2008. After booking in springtime, we had to have two tastings due to the fact that the chef changed over the summer. We returned for our anniversary weekend in '09, and there was a different chef. As the previous comment mentioned, this is the 3rd chef in the last 12-15 months. I know there's a lot of turnover in the service industry, but no establishment can benefit from THAT much change in a kitchen. It prevents guests from knowing what the vision of the restaurant is.

Wow! This is the third exec. chef here in less than a year! Plus, they've had some big turnover in their management staff. I had an event there in November that was wonderful, but it did make it a big challenging that all of the people I started my plans with were no longer there when the event happened!
