A new concept will be coming to the Milwaukee Public Market this June. And it’s taking the form of a renovated 1971 Volkswagen Bus.

On the Bus, a concept hatched by entrepreneur Emily Ware, will sell plant-based and "super food" offerings from a 430 square foot retail space next to Thief Wine and adjacent to Kehr’s Candies. The focal point of the space will be Ware’s VW Bus, the first car she owned.

The concept aims to meet the increasing demand for vegetarian and vegan options with a variety of housemade options including almond milk, veggie burgers, kale chips and vegan ice cream. The menu will also include smoothies, acai bowls and sandwiches.

"We're here to show Milwaukee that plant-based foods can be prepared in such a way that you'd never think for a second that anything is missing. It's my belief vegan food can be just as delicious, if not better, than their non-plant based counterparts," says Ware, who is also partner in The Green Kitchen operation at the market. "The public market is a great asset to the region and I hope the addition of On the Bus will add to its vibrancy."

On the Bus will replace FORM Fine Goods & Floral, who is moving into a larger retail space in Walker’s Point.
