Rehearsal dinner proves Urbieta is ready for Beard
Last night, I experienced the second of two rehearsal dinners at Ristorante Bartolotta that Chef Juan Urbieta and his team -- which included the creme de la creme of kitchen staff from the Bartolotta restaurants -- used to perfect the menu they'll serve at the James Beard House in New York's Greenwich Village on Dec. 1.

Today's at-a-glance review focuses on Ristorante Bartolotta, the anchor restaurant in downtown Wauwatosa. The Bartolotta dining empire has grown to include a range of fine restaurants in many styles, but for me there's still nothing that beats the original.

Foodies around town know the Bartolotta name, of course, and Bartolotta chefs like Adam Siegel and Juan Urbieta are also pretty high profile in Milwaukee. But as anyone knows, it takes a village -- or at least a crack staff -- to make a restaurant like Wauwatosa's Ristorante Bartolotta hum on a daily basis. So, when we met the tall and outgoing Zak Baker recently at the Ristorante, we decided that you ought to know him, too.

Last night, Paul Bartolotta was back in town for the Bartolotta Restaurants' annual truffle dinner at Bacchus and the Bartolottas pull out all the stops for this foody-est of all foody events in Milwaukee.
