Despite the acclaim heaped upon their mentors, we very seldom hear from the unsung heroes of the restaurant kitchen. Sous chefs aren't lauded with awards. Or mentioned in most restaurant reviews. They seldom get credit for dishes they've created that make it onto a restaurant menu. And - in most cases - there are few restaurant patrons who even know their names. In fact, I'd venture a guess that most people, unless they've worked in the service industry, don't have a very clear understanding of what a sous chef (French for "under chef") really does.

If you've sampled the dishes at Kohler's Blackwolf Run Restaurant, 1111 W. Riverside Dr., you can attest to Chef Paul Smitala's talents in the kitchen. Like his restaurant, Smitala is a mix of feast and fun. Trained at the C.I.A., he can cook with the best, but he also likes to have fun. You can see it in his kitchen, where he utilizes a range of equipment he created by modifying power tools (my favorite is the potato peeler on steroids), and you can see it in his ongoing commitment to teaching kids the way around a kitchen.

The venues have what might be described as a secret weapon. That's pastry chef Julie Thorsen, whose creations - like her Muppets cake pops for Sufjan Stevens - are so welcomed that she's getting more and more onstage props.
