At the conclusion of Tuesday night's dinner at Bacchus featuring Veuve Clicquot Champagnes and attended by winemaker Cyril Brun, Chef Adam Siegel said his challenge was to create food that played well with Champagne. While typically he might have to be careful to not overshadow the wines, in this case, he said, the wines were so strong he more had to meet their challenge.

At first thought, red wine seems to pair better with wool sweaters and fireplaces and flannel sheets. However, white wine can be just as satisfying during the winter, if the right kind is chosen.

The Hamilton, 823 E. Hamilton St., will open for a private event on New Year's Eve and then to the public soon after. Owner Kimberly Floyd says her new establishment will offer the neighborhood a classy but casual lounge that's reminiscent of a hotel lobby.
