Kelsey Williamson moved to Milwaukee this summer to take on a new position as pastry chef at the Iron Horse, where she has assisted in revamping the restaurant's dessert and bread offerings. I sat down with Williamson recently to chat about her background in food, her impressions of Milwaukee, and her opinions about what's hot (and not) in pastry.
