If you haven't had the pleasure of meeting Chef Kurt Fogle, pastry chef for the SURG Restaurant Group, it's tough to describe what a massive repository of pastry knowledge exists in the brain behind his unassuming baby faced exterior. But, suffice it to say, Fogle is a force to be reckoned with.

Kelsey Williamson moved to Milwaukee this summer to take on a new position as pastry chef at the Iron Horse, where she has assisted in revamping the restaurant's dessert and bread offerings. I sat down with Williamson recently to chat about her background in food, her impressions of Milwaukee, and her opinions about what's hot (and not) in pastry.
