Since the John Ernst Cafe opened in 1878, Milwaukee has scoffed at "big city" food bent on fussiness and ostentation. In time, this style gave way to a new crop of chefs and food, showing us that fine dining is possible in the city known for brats and cheese. While these new dining experiences are well documented, there is little known among the public about how that food becomes reality. "The Engine Room" looks into the kitchens of some of Milwaukee's coolest restaurants, led by some of its most relevant chefs.

For two years straight, Sandy D'Amato, long one of Milwaukee's best known and most respected chefs, has edged Bartolotta's Adam Siegel for top chef in our annual poll. But this year, Siegel has leapfrogged to the top by a slim margin.
