Colectivo Coffee broke ground this week on a new cafe in Chicago – its first-ever location outside of Wisconsin. The fully renovated, 1,800-square foot space sits at 2530 N. Clark St., at Clark and Deming in the heart of the city's Lincoln Park neighborhood.

Colectivo, which currently operates 16 cafes in Wisconsin, is widely recognized as an early pioneer in the third-wave coffee movement and an innovator in retail design.

"We’re excited for the opportunity to share our creativity, products and experience with a new community ... and for a new community to share new experiences with us." says Lincoln Fowler, Colectivo co-founder. "The more connections we make, the better we are at what we do."

The Lincoln Park cafe will offer a full menu of Colectivo products, including Session Roasted coffees, crafted using a signature roasting process that has been carefully honed for more than two decades.

Also on the menu: Letterbox Fine Tea, scratch-made Troubadour Bakery items, all-day breakfast, signature sandwiches prepared with slow-made breads and Colectivo Keg Co. house beers. Roasting and baking will continue to happen in Milwaukee with daily delivery into Chicago.

The cafe will feature the same level of complete design customization that Colectivo is known for in Wisconsin.

Renovations include installation of floor-to-ceiling glass windows and an indoor/outdoor garden room with fully functioning glass garage doors and skylights. The existing parking lot will be replaced by patio seating featuring custom umbrellas, fencing and furniture, new trees, landscaping and an outdoor fire pit to create an intimate pocket park experience.

All Colectivo cafe designs are the result of a collaboration involving Colectivo, The Kubala Washatko Architects, and a husband and wife artist duo.

"We’ve had our eye on Chicago for years," said Fowler. "It’s a world-class city where we can grow our business while supporting new communities and neighborhoods. This cafe will showcase the unique brand experience that we’ve been developing in Milwaukee for the past 23 years."

Colectivo Coffee is an independently owned coffee-roaster and bakery founded in Milwaukee in 1993. Its Lincoln Park cafe will open Fall 2016 with hours from 6 a.m. to 11 p.m.
