Matt Baier has been named chef at Dream Dance Steak, Potawatomi Bingo Casino announced today.

Baier has worked in the kitchen at the Menomonee Valley restaurant since 2005, serving as lead chef and sous chef during that time. Baier has also worked as lead chef at the casino's RuYi Asian restaurant.

"It’s a goal realized to oversee a kitchen at a restaurant of this caliber," said Baier, who earned an associate degree in Culinary Arts at Western Culinary Institute in Portland, Ore.

"I look forward to holding up the great reputation Dream Dance Steak has garnered over the years."

Baier said his debut menu captures the essence of his culinary style, which he calls simple but refined. The menu includes dishes like foie gras served with duck bacon, cranberry port jam and cauliflower puree; and pan-seared Arctic char with blood orange butter sauce, pomegranate seeds, grilled radicchio and brown rice.
