The female owned and operated Bavette Butcher Shop has opened at 330 E. Menomonee St. in the former Kafevino location.
The name, Bavette, is derived from a term referring to an inexpensive cut of steak served in French bistros. The shop is modern rendition of the time-honored butcher shop, featuring custom cut meat from animals raised responsibly on small, local farms.
In addition to hormone- and antibiotic-free steaks, chops and roasts, the shop also features a café serving sandwiches, salads and soups. Bavette is also working on getting a liquor license.
Local chef Karen Bell, formerly of Café on the Plaza and consultant on the soon-to-open Blue Jacket, has been clear about her plan to obtain and use whole animals to reduce waste, using bones for stocks, fat for lard and various cuts and odd bits for sausages.
Bavette will be open 10 a.m. to 7 p.m. Monday through Saturday, as well as Sunday afternoons beginning in mid-May.
