Lowlands Group – which runs Cafe Benelux, two Cafe Hollander locations, Cafe Centraal and Trocadero – has hired Chef Wilhelm Borgstrom as its culinary director.

Among Borgstrom's first tasks here has been to create a revised menu for autumn at Cafe Benelux in the Third Ward. That menu is expected to be unveiled this month.

A Wisconsin native, Borgstrom entered the culinary world at the Radisson Hotel in downtown St. Paul, Minn. He studied at New York's Culinary Institute of America and returned to St. Paul to cook at L'Etoile.

He has served as executive chef for a number of high-end hotels, according to a Lowlands Group release, and he opened restaurants across the U.S. and in Hong Kong, Rome, London, Barcelona and Munich.

Borgstrom has also worked for Hard Rock Cafe and McCormick and Schmick's, for which he opened 37 restaurants and led 23 restaurant teams in eight states.

Borgstrom comes to Lowlands from St. Paul-based Morrissey Hospitality, where he served as corporate chef.
