Giovanni's Italian Deli and Bugby's Back Alley Saloon will open in late March in the former Centanni, 218 N. Water St.
Giovanni's will make all of its meats including salami, prosciutto and mortadella, along with salads, pastas and Sunday ham and rolls. The deli will offer lunchtime counter service as well as take-out for dinners.
Bugby's, fashioned after a Prohibition-era speakeasy, will be located behind the deli.
Bavette Butcher Shop will soon open at 330 E. Menomonee St. in the former Kafevino location. Local chef Karen Bell plans to offer a meat counter featuring hormone-free meats processed at small slaughterhouses along with a market and cafe. A liquor license is pending.
