On this week’s podcast, we’re heading behind the scenes with Ryan Hoffman, Patrice Gentile and Ricky Ramirez, the folks behind one of the most unique food truck concepts to hit the streets in the Cream City.

Unlike most trucks, Gavilán (named for the South American bird of the same name) operates without a particular theme, serving up an inventive, ever-changing menu of eccentric, bar-worthy fare. But where does the inspiration for the truck come from? What’s the synergy between Gavilan and its homebase bar, The Mothership? And how do they keep guests hungry for the truck’s next new offering? Along the way, we discuss some of the truck’s popular offerings, from the infamous pizza rolls to an East Coast sandwich that’s getting a new life at the hand of chefs in the Midwest: the chopped cheese.
