Interval is slated to open a new cafe at 2266 S. Kinnickinnic Ave.
Owner Ryan Hoban signed a lease on the former Stone Creek Cafe about three weeks ago after Scott Genke of SG Property Management reached out to him to gauge his interest in the property.
“I wasn’t shopping for another location,” says Hoban. “But I’ve always loved that corner in Bay View... and being a part of the fabric of the community there is really appealing.”
Hoban says the cafe will be treated to a variety of cosmetic updates, including some new finishes and equipment. But he hopes to open the coffee shop by sometime in June.
Guests can expect a full coffee menu, along with Interval’s signature tartine program at the new cafe, and, if all goes well, a liquor license as well.
“We want to be respectful of other businesses in the area,” says Hoban, “Including Voyager, Lost Whale and NonFiction Natural Wines. But we’d love to be able to offer wine as we do at our other cafes.”
The Bay View cafe will be a third location for Interval, which established its first cafe in 2018 at 1600 N. Jackson St. and a second location at the MARN Art + Culture Hub, 191 N. Broadway in the Historic Third Ward.
“We’re really excited to put our stamp on that corner,” says Hoban. “I’m grateful for what Eric [Resch] has done on that corner, and I’ll willingly take up the coffee banner and continue it on in that location.”
