History is being made this week in the Third Ward as the Milwaukee Public Market welcomes its newest locally owned vendor, along with its second Black woman-owned business since opening sixteen years ago (the first was the Buffalo Watter Beer Bar).
Pat’s Rib Place, founded in Waukesha in 2009, will officially open its doors to the public on Friday, Oct. 22, offering their signature smoked barbecue ribs, chicken wings, beef brisket and more to Market guests.
“We created Pat’s as a way to honor great food and hospitality,” note owners Alisha and Tydus Hayes, who founded their business in honor of Alisha’s mother, Pat. “The Milwaukee Public Market is a perfect opportunity to expand our products in a location that showcases some of the best offerings in Milwaukee’s food and beverage scene.”
Tydus Hayes, the man behind the smoker at Pat’s, smoked his first meats as a young man in Atoka, Tennessee, where he was raised on a farm before coming to the Milwaukee area. The farm was equipped with an expansive vegetable garden, along with a smokehouse that his great grandfather used for smoking meats from animals raised on the farm to feed their family.
Beginning Friday, the Hayes will bring their Southern barbeque expertise to the market, where they will operate from a 600 square foot vendor space located between West Allis Cheese & Sausage and St Paul Fish Company.
On the menu, guests will find a variety of meats – including pulled pork, ribs, chicken wings, brisket, smoked pastrami and corned beef all smoked fresh daily. Meats will be served with Pat’s homemade sauces, which will also be sold by the jar. Delicious housemade sides, including cornbread, smoked baked beans and homemade coleslaw.
“This is an exciting moment for the public market,” notes Paul Schwartz, executive director of the Milwaukee Public Market and Business Improvement District #2. “The market was created as a gathering place which cultivates an experience that’s rich in culture, food and people. Pat’s renowned products and service will no doubt enhance that experience in every way.”
Pat’s Rib Place will be open at 11 a.m. daily, with service continuing through the market’s usual operating hours.
