West Allis is a pretty thirsty place, but you can't just turn on a beer tap and expect customers to pile through the front door.

Well, you can do that -- and some have tried -- but the way to foster loyalty is to create a fun environment with cold drinks, good food and consistent service.

Paulie's has followed that formula since 2004 and has built a loyal customer base as a result.

Menu: Paulie's offers 15 beers on tap, from Miller products to Spotted Cow, Sam Adams, Stella Artois, Guinness and New Glarus Black Wheat and sells more Tuaca (Italian liqueur flavored with vanilla and citrus) than any vendor in the state. The bar is known for excellent food, including an all-you-can-eat Friday fish fry.

Price: Moderate. There are drink and food specials nearly every day, including half-priced drinks and appetizers from 2 p.m. to 6 p.m. Monday through Thursday (and 1 p.m. to 4 p.m. on Friday).

When to go: The patio, which overlooks the south end of the Wisconsin State Fair grounds, was a great addition to Paulie's and makes a pleasant spot for people watching when the weather is warm.

Dress: Very casual.

Don't miss: Paulie's offers a lively karaoke party on Monday night and often books local bands on Wednesday. Some headliners include Chasin' Mason, King Solomon, Love Monkeys and others. There is never a cover. Check the Web site for details.

Parking: Outside of the 11-day State Fair window, parking isn't usually a problem at Paulie's.
