Another of the restaurants on our "13 to watch" list will be opening this spring.

Madison-based RARE Steakhouse, which plans to open in the new 833 East office tower this May, announced today that Chef Paul Morrison will serve as executive chef for the Milwaukee location, 833 E. Michigan St.

Morrison’s former experience includes work for Chicago’s Miller’s Pub as well as ZED451. He also served as executive sous chef and and chef de cuisine at Michael Jordan’s Steakhouse in the Mohegan Sun Casino.


The Milwaukee location will reportedly heavily resemble the library dining room at the Madison Rare location.

"I’ve been involved in the Chicago restaurant scene for the last 10 years, but I could tell RARE Steakhouse was something special," said Morrison. "I look forward to making Milwaukee my home and assisting in contributing to the ‘RARE experience,’ as well as cooking the best steaks in town for our guests."

RARE, a restaurant created by Wisconsinites specifically to serve the preferences and tastes of local diners, will feature USDA Prime steaks from Meats By Linz of Chicago along with an impressive wine list. Like its Madison counterpart, the Milwaukee location will showcase a classic setting with private dining areas and spaces equipped with technology for corporate gatherings and events.
