A new barbecue joint on wheels will join the bustling food truck scene this summer. Rollin’ Smoke – a rectangular red trailer that looks like a caboose – will serve barbecue and other smoked foods starting next week at many locations in Milwaukee and beyond.

Owner and operator Dan Neumann says his barbecue mastering started out as a hobby, but friends and family encouraged him to take his recipes to another level.

Rollin’ Smoke will offer ribs, chicken, brisket, smoked beef and pulled pork nachos along with some "off the wall" items (according to Neumann) such as smoked cheesy potatoes, smoked chocolate mousse and "fatties."

"These are bacon-wrapped sausages stuffed with all different things and then sliced and served as a sandwich," says Neumann.

Neumann has owned a bar and painting business in the past and looks forward to being self employed again.

"The business keeps blossoming," says Neumann. "Can’t wait to get out there."

Rollin’ Smoke will debut on Monday, June 4 at The Bubbler from 4:30 to 6:30 p.m. and then at The Bottle for the rest of the evening. Look for it at other events this summer.
