Last December, we reported that Sushi Go, the food truck that's become known for its sushi burritos, would be settling into a brick-and-mortar location at 2110 E. Oklahoma Ave. 

Owners Amanda Trenbeth and Erik Irmiger have spent the past eight months preparing the space for its first customers – from painting and tiling the floors to hand-chalking the menu boards behind the counter.  And, beginning today, Bay View officially has its very first sushi restaurant.

Located on the corner of Kinnickinnic and Oklahoma, the restaurant doesn't yet have a sign so it's fairly easy to miss. But, if you keep your eyes out for the rainbow colored "OPEN" sign, it's easy to spot.

The space is bright and cheerful with room for 40 to dine comfortably at two and four-top tables and banquettes. There will also be outside seating on a small patio behind the restaurant in the weeks to come. 

You'll want to stop to check out the art on the walls, all of which was created by family members, including this piece by Trenbeth's father.

The restaurant is what Trenbeth calls "elegant fast dining." Customers order at the counter, and the food is delivered to their table.

Trenbeth says the goal was to create a space that's easygoing, where parents feel comfortable bringing their children. "We want it to be the sort of place where busy families can feel comfortable going when they don't want fried chicken or pizza for dinner," she says.

Sushi Go's menu will be limited for the next few weeks, focusing on items traditionally served on the truck, including sushi burritos and traditional sushi rolls. However, beginning in mid-September, the restaurant will also expand the menu to include both a pork-based and vegetarian ramen along with rice bowls, salads and wraps.

On the beverage side, there's also a variety of options, including water and soft drinks along with wine, beer and sake. Complementary lemon water and hot green tea are also available at a self-serve station in the dining room.

Sushi Go will be open Tuesday through Saturday from 11 a.m. to 9 p.m. Both dine-in and carry-out are available. You can also follow Sushi Go on FacebookTwitter and Instagram.
