e Diplomat will open its doors Tuesday, Aug. 15 at 5 p.m. – with highly acclaimed Chef Dane Baldwin, who has more than 20 years of food industry experience, at the helm.
Located on Brady Street in the former Bosley on Brady space, The Diplomat will feature a small plate menu of American regional cuisines, all priced to be affordable. There will also be a full service bar with three local craft beers on tap. Baldwin plans to keep the menu small and constantly changing to reflect the seasons of Wisconsin.
Baldwin has been working in the food industry since the age of 15. He is a field-trained chef with experience as restaurants ranging from Bacchus, Barossa, the Milwaukee Art Museum and, most recently, Mr. B's Steakhouse, where he served as executive chef.
Some of the menu items will include trout served with romesco sauce, dilly beans and radish; beef short rib with fondant potatoes, pickled mustard, broccoli and Cumberland sauce; and the Diplomat Fries, which are french fries cooked three times to produce a crunchy exterior and soft interior, paired with garlic mayonnaise.
Also on staff at The Diplomat is general manager Eric Kaye, who has 22 years of combined experience in New York, Minneapolis and Milwaukee. Other staff members include Executive Sous Chef Paul Taufner, Sous Chef Nick Boyd, bar manager John Papp – who previously served as lead bartender at the Iron Horse Hotel – and Baldwin's wife, Anna.
Baldwin says The Diplomat promises to be a fun and welcoming place that provides high-quality food at a casual price.
"For me, it was important to be welcoming in terms of price and atmosphere. I want everyone to feel comfortable coming through our doors and sitting down to have dinner with us," said Baldwin, in a press release. "The small plate format at The Diplomat is my opportunity to craft an approachable menu that surprises, delights and excites my guests."
