It looks as if the former location for Pastiche Bistro and Wine Bar in Bay View won’t be vacant for long. In fact, a new restaurant could open its doors in the space as soon as late August or September.
The new venue will be called BV 3001 Restaurant and Lounge in accordance with its location at 3001 S. Kinnickinnic Ave. in Bay View, notes owner Troy Schoenrock.
A seasoned industry veteran, Schoenrock has spent the past 35 years working as both a manager and restaurant owner. Among the venues he’s graced are Lakeside Restaurant and Club and Heaven City in Mukwonago. He also operated Something Italian, a restaurant located on 35th and Forest Home, with his father-in-law.
Schoenrock, who will be operating BV 3001 with his son Jes, grew up in Bay View and attended Bay View High School. He says he was alerted to the vacant restaurant space by some of his former customers and decided it would be nice to bring a restaurant concept "back home."
He says the vision for BV 3001 is reminiscent of a "little neighborhood supper club," with a cozy vibe and a casual fine dining atmosphere.
"I’m an old school guy, and we want it to have an old school vibe," he says. "So, we’ll be taking traditional things that have been the foundation of my success over the years and incorporate some newer, trendier things."
Schoenrock says they’ll utilize the entire restaurant space, including the second floor wine shop which will be converted into a dining area and event space. He also hopes to add outdoor dining options, including an area on the rooftop.
The concept is still being tweaked, Schoenrock says. But he says the menu is likely to include high quality steaks, ribs, chops and seafood along with Italian specialties like pasta and individual Neapolitan-style pizzas, all offered with an eye toward affordability.
"Everything will lean toward the Italian side of things," he says, "because that’s where our expertise lies."
He says the bar will feature beer wine and a variety of classic cocktails, including (of course) an old fashioned, martini and a variety of other riffs on classics.
Once open, BV 3001 will serve both lunch and dinner.
