Downtown diners, rejoice. A new dining option, which we reported last month, is now available with the opening of Colour Palate at 789 N. Water St. in the former Cousins Subs' space. 

The fast-casual restaurant focuses on made-to-order salads with ingredients of your choosing. Or you can try something from the eight salads on the menu, as I did. 

With choices such as Mediterranean "shaved raw" – a kelp, brussels sprouts and more, "sxsw" – lettuce, black beans, avocado and more, "Bombay chop" – a kale, chickpeas, cucumbers and more – there is plenty to choose from on the preset menu. 

I chose the "Pacific rim," and thoroughly enjoyed the mix of bok choy and kale, chow mein noodles, carrots, green onions, almonds, edamame and mandarin oranges tossed in a creamy peanut dressing. It was made quickly and tasted fresh and garden-crisp. 

You can eat your greens in a petite size for $7.95, regular for $8.95, or in a wrap for $7.95. I added chicken to my salad for $2 – but you could also do steak, tempeh or garden. A custom build salad includes greens, four primary toppings and a drizzle of house-made dressing in the same sizes for a bit less cost. 

I love this option for a lunch – or maybe a quick dinner before a show Downtown. You could even get it delivered by Flavor Cycle. I'll be in again soon to try another – and hope you will, too.
