In December, we announced that Grassroots Salad Company would open a new location in the former Capriotti's Sandwich Shop at 111 E. Wisconsin Ave. (in the Chase Tower).
We now know that the locally owned restaurant has set an opening date for Monday, April 30. And that's very good news for folks who live and work Downtown.
Grassroots Salad Company, a fast casual concept specializing in made-to-order salads, wraps and freshly squeezed juices, is owned by brothers Peter and Louie Liapis, who also own Georgie Porgie Burgers and Custard in Oak Creek and Mount Pleasant.
This will be the second location for Grassroots Salad Company, which also operates a kiosk in Brookfield Square.

The Grassroots menu features five core offerings: Caesar, Cobb, Santa Fe, Asian (pictured above as a wrap), and Kriti, a Greek-style salad with Kalamata olives, grape tomatoes, red onions, chickpeas, Wisconsin feta cheese and Greek goddess dressing. Guests can also build-their-own salads from a selection of fresh and housemade ingredients.
Details are still forthcoming, however, the Chase Tower location will feature a number of additional menu items, including limited breakfast offerings and a number of new fresh-pressed juices.
Initial hours for Grassroots Chase Tower will be Monday through Friday from 8 a.m. to 4 p.m. and Saturday from 10 a.m. to 2 p.m.
