Robin Kasch remembers the '60s, when the perception of vegetarian food was that it was unsatisfying and tasted like cardboard. Things haven't changed much in the last 50 years, but Kasch, owner of the all-vegetarian Caf√© Manna in Brookfield, is doing her part to change attitudes toward meat-free eating, in part through monthly cooking classes held at the restaurant.

Produce is at its peak when it's ripe, which is why more and more restaurant owners and chefs are steering away from the Syscos of the world and turning to providers in their own regions for fresh, local, seasonal foods. It's a national trend and here in Milwaukee, several restaurateurs are beginning to cook seasonally and shape their menus around what Mother Nature giveth.

For OnMilwaukee.com's Dining Month Kasch has graciously shared her recipe for tabbouleh wraps, an appetizer featuring a tabbouleh salad of cucumbers, tomatoes and herbs, served Lebanese style with a hint of freshly squeezed lemon.

Although not totally vegan, Caf√© Manna is slated to be 100 percent vegetarian, falling into an extremely slim category of Milwaukee area eateries.
