At OnMilwaukee, we believe in lifting up all voices and using our platform to support others’ dreams.  And that's what we hope to do for Dominic the Food Reviewer. When I first met Dominic almost two years ago, I was impressed by his passion, his curiosity and his interest in improving his writing. Over time,  I’ve not only enjoyed getting to know him better, but he has taught me as much as I have him. My hope is that you’ll not only enjoy reading Dominic’s reviews, but also glean understanding and joy from seeing the world of food through his eyes. -- Lori Fredrich, Dining Editor

This past weekend I went to the Restaurant to be Named Later, One Brewers Way, inside the American Family Field stadium (formerly Miller Park). I talked to executive chef Bo Bronk about the restaurant, their seasonal menus and the plans for the restaurant moving forward. The restaurant opened last March in 2021 replacing TGI Fridays.

Bo started his career cooking at a pizza place at the age of fifteen. He found his passion for cooking and entered culinary school in order to become a chef. Chef Bronk is very knowledgeable regarding the restaurant industry and is very creative with his food. 

As you walk into the restaurant old seats from County Stadium line the entrance. This is a perfect spot for groups to sit and take group photos. The restaurant is situated overlooking the outfield of the ballpark with windows that look directly down at the baseball stadium.

Whether you are there to enjoy some food and watch a Brewers game or just coming in to eat, the view of the field is gorgeous. At the restaurant, our waitress Jalyn was incredibly patient and friendly.

For our appetizers, chef Bo brought out multiple items that will be available on the seasonal menus. We first tried the roasted brussels sprouts.

The chef told me that it had caramelized apples, brown sugar bacon and thyme balsamic glaze. The brown sugar and balsamic glaze made it have a slight sweet flavor. The brussels sprouts were perfect for this time of year.

Next I tried the deep fried cauliflower with kimchi with ginger glaze.

The cauliflower was super tender and the ginger glaze gave it a delicious tang. I could not stop eating them because they were very appetizing and super delicious.

I tried their fall seasonal salad as well. The salad had kale, marinated grapefruit, baby beets, burrata cheese and hazelnuts.

The burrata cheese and grapefruit had a creamy, fresh and flavorful taste to it, plus the salad was right up my alley because I enjoy eating fruit mixed in like the grapefruit.

Then I sampled the Jalapeno popper grilled cheese with seasoned cream cheese, brown sugar bacon and roasted jalapenos.

When I took a bite into the grilled cheese the bread had a nice crunch and jalapenos had a perfect amount of heat for me.

For my main meal I gave their Double Play Burger a try. The burger included a burger patty, a brat patty, arugula, cherry chutney and beer mustard.

The burger was cascading with mustard and the brat patty and burger patty were the perfect combination, because nothing is more baseball than burgers and brats.

For my snack I had the giant pretzel with bier cheese sauce.

I thought the cheese was extra cheesy and the pretzel was humongous. I was very surprised at how large that pretzel actually was.

For dessert I had the mini doughnuts with cinnamon sugar cream cheese frosting with apple butter.

What I absolutely enjoyed about my cinnamon sugar mini donut is that it had the perfect amount of cinnamon sugar and made for a great end to the otherwise healthy meal. 

I think everyone should check out the Restaurant to be Named Later, as it is in a super cool location and the food is excellent!
